Planning a 10 day trip - need help

I am planning a 10 day trip with my wife (both Indian) in the month of August (Second half). We would like to have a slow paced trip and would like to focus on experiences rather than just running from one location to other. Need help on the following points

1. Which region should I focus - North or South

2. Are there guided tours / horseback camping tours which last 2-3 days? (Note - There is a eagle hunting tours (24h) mentioned on Trip Advisor but it seems like an adventure curated for Europeans. I am looking for a traditional Kazak experience)

3. Given August is a hot month - is it worth visiting the skiing resorts ? Or can they be skipped entirely?
