Has anyone tried making vegan bologna at home?

Bologna was my favorite lunch meat growing up, I know it’s so gross but I loved it. Every time I’m near a store that sells the yves brand bologna slices I buy it. But it’s honestly quite expensive and out of my way for shopping. I’ve made vegan ham before using seitan but the texture of the yves brand is JUST like bologna. So I was curious if anyone else here loved bologna and has tried and successfully made some!
