Non-Fiction/Queer Theory Books About Bisexuality?

Hi! I'm a lesbian who is dating a beautiful wonderful amazing bisexual woman and wants to understand her better. Since the experience of being attracted to men and still decided to be with a woman is foreign to me, I've been looking to find some resources to help me understand her and her sexuality better. I know reddit may be the wrong place to ask, but does anyone have any recommendations of queer theory about bisexuality specifically? Not looking for fiction but rather for actual people talking about their actual experiences (I have a BFA and have read a TON of queer literature so the language being complicated is no issue for me.) Thanks!
