Camera for Beginner looking to freelance?

- Condition: Used
- Type of Camera: Uncertain if mirrorless or DSLR is best for my use care
- Intended use: Freelance, niching down... Food Photo & possibly fashion in time, art documentation?
- If photography; what style: Food, Fashion, Art
- If video what style: Food
- What features do you absolutely need: I'm not sure
- Portability: Shouldn't make much difference
- Cameras you're considering: Sony A7 IV, Sony a6700, Canon 5D Mark IV, Canon EOS R8
- Cameras you already have: I have used a Panasonic LX100, but want either Sony or Canon ecosystem
- Notes: I mentioned Canon 5D Mark IV because I'm not sure I need amazing gear starting out. I'm not exactly sure what lens I should pick up or any of that, so I wasn't certain if an older body with X lens is better than these mirrorless or not.
I'm making a pivot from videography & film to photo. I plan to begin freelancing by the end of the year, or if I'm lucky, start taking on basic gigs in a month or so. I'm not intending to niche down at the beginning, but ultimately, I'm interested in food photography with nice restaurants, because I have a history in culinary. Fashion photography also interests me, as well as art documentation.
I'm interested in Canon DSLR because I like Wolfgang Tillmans & Ume Kayo's work. However, I know the Sony line is incredible and can be great for videography as well. I'm not sure if I should go for a mirrorless or what would be most helpful for me to learn on. My goal is really to get to work as fast as I can, so whatever will serve as the best tool in that case.
What camera/other gear would you be looking at if you're in my position?
Also, if anyone is in Los Angeles & might need a photo assistant or would let me shadow them, my inbox is wide open.
