THE PRESSURE

6 weeks ago I got a brisket at Costco and it was $75. Yesterday roughly the same size was $120. It’s so much pressure to get it “right” when it’s that much on the line that I’m struggling with keeping it fun in my mind. Beer helps.

On another note- does anyone else not go for the super-bark? Am I missing out that much by not having the deep bark? I will update with a pic when I’m done for clarification.
