Tips for how to get the most out of doing "lore master" on an anniversary server?

Classic 20th Anniversary Realms

I started playing WoW in late Vanilla, some 20 years ago. I was fourteen and absolutely terrible at video games, the only similar game I'd ever played was Ragnarok Online. I loved the game but I never got very far due to being such a failboat, and then Cata came, and the game kept changing, and all the quests I wanted to experience disappeared...I've come back to WoW several times over the years but it never really stuck. When Classic first was implemented I tried playing and all I got from it was a reminder of how hard it was for someone with bad reflexes and poor coordination.

But I've come back again! I tried playing FFXIV for a few years but being tied to a single plot line is a little grueling even if I like the game otherwise. It just doesn't give the open world feeling that WoW has, the ability to make real choices about what to do with yourself. I'm disabled and can't drive so I don't leave the house much, and MMOs have always been one of the biggest way I socialize as an extroverted person.

Anyway... I've decided to try out Classic again and start on an Anniversary realm, but I could really use some advice so I can try my best instead of getting swamped and overwhelmed again. So I'll list some questions and hope you guys can help! Thanks for reading!

Which server should I choose? I'm going to pick Alliance because of the quests.

I like night elves and gnomes. Do you recommend starting in Kalimdor or Eastern Kingdoms? Is there a certain class that's good for soloing or has more interesting quests? My "best" class back in the day was Disc Priest during Cata, but I'm not confident healing groups anymore due to brain damage. I would like to do a crafting profession that will help me as I play instead of just doing double gather and selling.

Please add anything you think is important!
