Help feeding 100- lots of milk and eggs

Hello everybody! Tomorrow I am helping to prepare a meal for around 100 houseless people. I specify this because the meal gets individually portioned in to-go containers. We routinely make meals out of donated ingredients and this time we were given 2 gallons of milk and 36 eggs. The milk will expire if any of it is not used so I’m trying to find a way to use all of it for this. All ideas for things that can be semi-easily individually portioned are welcome!
