What to level for end game tanking and healing in PVE?

Hey guys I'm almost level 40 and was curious what I should level and get used to if I want to be and end game tank and healer? I'd rather have them maxed out and familiar BEFORE I hit end game. I've been enjoying spear, rapier and GS. I'm talking PVE specifically. I assume sword and shield/sword and flail and healing staff. I asked global chat several times and no one answered me.
