My girlfriend's favorite meal so I make it a lot.

Recipe is

8 short ribs
1 cup red wine
3-4 cups beef stock to cover the ribs
1 onion
4 cloves of garlic
However many carrots. I like a fuckton.
Little bit of celery
Put some thyme in there
Put some rosemary in there
However much black pepper you are comfortable with
Salt
Red pepper flakes if you're cool like that
Flour
Oil
Tomato Paste

So, first preheat your over to 350, season your short ribs with salt and pepper and then coat them in flour.

Sear them in in a Dutch oven with oil that has been heated to medium high heat on all sides until sexily golden brown. Remove. Throw in your onions, carrots and celery and saute for however long you feel like. Throw in the garlic and let it go for a few minutes until you smell garlic a lot. Add in a few spoons of flour, stir it up and cook for a few. Then add in a few squirts of tomato paste and stir and cook for a few more.

Now add in your beef stock, wine and the herbs and spices. Boil the fuck out of it for like 7-10 minutes. Put the ribs back in, shove a lid on it and put it in the oven for 2:30-3 hours. Take it out, marvel at how delicious your house smells. Remove the bones from the meat by looking at them strongly.

Make whatever starch you want to serve them on, rice or potatoes work at my house. Put it in a bowl or on a plate. Take you a rib and some carrots and put em on top. You can shred the ribs too if you want but nobody really cares since the meat falls apart on it's own. Spoon some meat juice over top. Eat it.
