Visiting from US

My husband and I have always found New Zealand beautiful and are planning a week visit in mid March 2026 for our 10 year anniversary. We are considering the South Island because we are mostly interested in sightseeing seeing (not set on where to stay). What are things that are a must see/do/eat. Any advice at all would be appreciated. Thank you.
