What's the most balanced difficulty?

I've been playing on normal for a while and it's getting too easy. I already have an endgame build capable of one shotting most enemies and even found out I can tank a missile to the face with minimal damage.

I was wondering what a fun difficulty would be to try that gives me a challenge cause I have too many healing items and grenades hoarded for comfort.
