So many choices for a beginner

I’ve buried myself in research since discovering this hobby weeks ago and am still not sure what to go with. It seems most beginner bikes in the $1500-$2000 range each have their specific flaws. I’ve looked at the Kona sutra with its derailleur hangar issue and underwhelming brakes, the salsa marrakesh’s lack of compatible racks and its unpopularity with newer models, the surly disc trucker and its overpriced components. My perfectionist mindset even has me looking into a custom build without knowing my personal preferences yet. Am I overthinking this? Do I just need to go test ride some and see what fits best and forget about the details as a beginner? For reference I’m looking for something versatile for touring/bikepacking that would be used primarily on paved roads but can handle gravel easily and the occasional light single track. Will also be using it to cruise around town. Thanks for any advice.
