Is it a bad idea to not stick to a niche ?

I started my channel a month ago and i have a list of ideas i wanna go through. I did a fitness video and a food challenge video till now. Next video i am uploading is comparing gpt 4 to gpt5 full online type video. My plan is to try every type of content on the channel, whether its irl challenges, food reviews, reactions, interviews etc. Will that affect my channels reach negatively? Should i create different channels for each niche ?
