I want to give One Piece one last chance.. pls help

I’ve tried watching One Piece maybe five different times now, and each time I can’t seem to get past the first arc or two. I’ve even tried one pace I keep hearing people around me saying it’s “the greatest piece of fiction of all time,” so I really want to give it one last shot.

Here’s the problem: • I have a short attention span, and the random side missions and slow paced conversations and the really weird looking characters and art tend to pull me out of the story. I’ve also heard some people saying they’ve watched 700 eps and still didn’t end up liking it.

•	I’ve got a family and not a lot of free time, so I can’t just sit through hundreds of episodes hoping it gets better.

If I want to see why people hype this series up so much, what’s the best way to watch it? Should I start from a certain arc? Is there a specific list of must-watch episodes to get to the best parts of the plot?

I’m not looking to disrespect the series, I genuinely want to understand why so many people love it. I just need the most efficient route to experience the magic.
