Forgetting the final "s" to make words like "mask," "scientist," or "ghost" plural

I don't know I just didn't realize until Covid that people do this or what. Suddenly people were talking about masks and scientists a lot more in daily conversation, but SO MANY of them don't seem to think that such words need that final "s" to make them plural.
