Chocolate Chips/Chunk recommendations

I need a new chip. Ghirardelli used to make a 'dark chocolate chunk' it is now discontinued. I've been looking for a replacement. The Ghirardelli's would melt & remain soft, even after the cookie cooled. I can't seem to find another chunk that does that & the texture of a big hard bite in the middle of a perfectly soft cookie is sad (for me). I'd be happy to move to a chip, I just need it to melt & stay kinda like that. Thanks!
