New to all of this, especially with the cycling part. I'm confused what's happening on my tanks. Pls help

So I recently got 2 planted tanks. 5gal and 8gal both for my 2 betta fish (the seller is temporarily keeping them for me until cycle is complete) I'm currently doing fishless cycling. I also have seachem prime and stability that I put everyday and fertilizer for plants. I also use API Freshwater Kit to track everything. I got 5 gal 4 days ago and the 8gal 1 day ago and I added fish food yesterday in it. Here's the water parameters:

5 gal - ph is normal, ammonia is 8ppm, nitrite is 0.25 ppm while nitrate is normal (I always do water changes to lower down the ammonia since this is always the result for 3 days. Is that right or just leave it alone?)

8 gal - ph is normal, ammonia is 1ppm, nitrite is 0.50 ppm while nitrate is normal

Pls. help since I'm not exactly sure what's happening like did the cycle started already? When should I do water changes and how often? Should I just leave it alone? Is it ok to put fish food everyday? I'm also planning to add more plants. Thank you in advance.
