Tomato watering.

Has anyone any theories on when you should stop watering tomatoes. I've always kept watering mine till about the end of September although I do cut down a lot on what I give them, however I was in a small market garden type place a few years ago and they had already stopped watering at the end of August. Both theirs and mine are in polytunnels.
