What is your dream selection?

Hi!

I'm a buyer currently building an inventory from the ground up. If you can imagine, I'm currently buried under a never ending mountain of options. Imagine Everest but it's Bourgogne. My biggest problem is currently the super premium selection. I'm limited on space and budget for it so my final decisions have to be more or less impeccable.

So here's my question: what does your dream wine list look like? I'm currently focusing on France- Bordeaux, Bourgogne, Champagne and Rhone- but also have Northern Italy and California coming up next. I'm talking bottles you only dream of. For me it'd be Delas, Senechaux, Petit Lion, Vacheron, Biondi Santi, and Quintus, but I'm only sort of buying for me.
