Should I decline a job that is offering almost double my current pay?

Got offered and actually accepted a position that would be a 5 days a week in person position and it pays me anywhere between 55% - 100% more than what I currently make. My position I am at now is making 100K a year and is fully remote, and for this new position I would be making 155K base with a potential 45K bonus. The job I have right now is very stable with little chance of a layoff and I have great work-life balance as I'm able to finish everything in about 4 hours each day.

The other issue is I enjoy where I'm currently living right now and don't have a ton of desire to move across the country except for the money and being able to put this company on my resume. To make the decision even more difficult, my girlfriend and I are planning on getting engaged soon and I feel like staying where I'm at now offers more stability during the engagement. We would get married after a couple months of being engaged and then she would move out across the country with me, and she says she's completely fine with whatever decision I make.

Part of me wants to take the job as it will mean more money and faster career progression, but part of me wants to stay where I'm at now for stability and to enjoy this time of my life where I have great work-life balance. Has anyone been in a similar position and anyone have advice on what they would do?
