Am I (27f) being too sensitive about my gf (28f)?

We've been together for about three months, so we're somewhere between the honeymoon stage and uncovering the little things about each other that are annoying. My annoying thing is that I talk a lot. If I ask my gf about her day, she can summarize it in maybe 2 minutes. If she asks me, I go on a 15-minute rundown of what I did, who I saw, what I ate, the funky bird at the park, the cashier who liked my shirt, my dog peeing too many times on a walk, and on and on and on. Usually, my gf is a great listener, sometimes she placates me with a well-placed "oh yeah?" or "wow", and other times she asks if we can pause the conversation and pick it up later. Luckily for her, I am very forgetful, so we rarely continue the conversation, and she's spared from hearing my incessant yapping.

I recently lost my job, and I've been interviewing nonstop. I tell her about my interviews all the time. I don't expect her to remember any of the details like company names or job titles; I mostly tell her because she's my partner and I like telling her what I'm doing with my life. The search has also been giving me a lot of anxiety, so it helps to talk things out. Last week I was yammering on about which jobs I was most excited about when she interrupted me to tell me she didn't care. She didn't say it in a mean way; she just sighed and said, "Baby, I'm gonna be honest: I don't care." It offended me at first, but I shrugged it off because I realized I had been talking for about 15 minutes straight, this was the second or third time that day that I'd brought up my interviews (lord knows how many times I'd brought it up during the week), and she'd also had a pretty exhausting day at work.

Last night I went to dinner with some old friends. My gf was asleep when I came home, so I showered and got into bed silently. Despite my best efforts, I woke her up and we started talking. I tried to keep the convo short because I thought she was going back to sleep, but she started asking me questions about our plans for the week. I asked her what she did while I was at dinner, how her workday ended, really mundane stuff. She gave me her two-minute summary and asked how dinner was. Seven minutes into my monologue, I started talking about the weird posters one of my friends had in his office. As I was describing them, my gf stopped me and said, "I hope you don't take this the wrong way, but I do not care." This time, I was hurt. I told her that it hurt my feelings and she groaned. I told her I'd rather her tell me she was tired or that I was talking too much. She interrupted she was sorry for hurting my feelings, then she rolled over and went to sleep.

Things have been tense all day, and I'm trying to decide if I want to talk to her about it or let it go. It seems harsh to tell someone you don't care about what they're talking about, especially when that person is your partner. It also feels more harsh because I know she knows other ways to get me to stop talking without hurting my feelings. The lack of a real apology also bothers me; she just rolled over and went to sleep and hasn't spoken to me since. On the other hand, I feel like I'm being sensitive. Neither topic was truly important or groundbreaking. However, she shares things with me all the time that I don't care about, yet I still listen and ask questions and even follow up on the development a few days later.

TL;DR: Should I talk to my gf about her interrupting me to tell me she doesn't care what I'm talking about, or am I being too sensitive because the topics weren't important anyway?
