Head Gasket Overbored Size

I have a bored 22re block at .030. I’m in the process of rebuilding and I’m having troubles getting it to run smoothly. If I used a stock head gasket on a block bored over .030 would this be causing overheating issues and rough idles? I’ve installed and adjusted new TPS according to book. New MAF. No check engine light. Radiator is fine, hot inlet, cool outlet. Checked Idle screw and replaced IAC. I’ve rechecked timing countless times. I even remove valve cover to confirm I’m at 5deg BTDC (rocker arms loose on cylinder 1). What am I missing? The engine will start and run, but after a few mins you can smell the burnt or evaporated coolant
