which games save data will transfer to new switch?

my switch 2 is in the mail and im going to transfer everything onto my new one. i know all the games transfer, but i read that some games save data deletes from the old switch. i saw animal crossing and splatoon data transfers to the new switch, so does that mean the old switch will have like fresh games? does anyone know if my stardew farms will transfer?
