First overland trip (ground clearance, wheels and tires)

Before I begin, yes, I know I could have gotten a rebel instead of a Laramie. When I bought the truck, I have never gone offroad (in any vehicle before). Now I have friends that are inviting me to do some overlanding in West Texas, so I am just doing research and trying to understand.

I am told tires make the biggest difference, but I am worried about putting all-terrains on wheels that are already 22". I really like the way the method double standards with -12 offset look with all-terrains (example: https://i.ytimg.com/vi/AW0K41aJlgA/sddefault.jpg). What size tires would people recommend? 35s? 33s? any clearance issues with on stock suspension? Based on tire recommendation, how much more ground clearance will this give me?

Should I keep the same wheels and put on just tires instead? Pros and Cons?
Thank you everyone for the help!
