Bosch 800 series convection oven consistently under-heating

Bought this oven 1 year 10 months ago. It is very inconsistent with regard to accuracy of set temperature and actual internal temp of the oven. I'm using 2 different thermometers to check temps and they are generally in agreement. 70% of the time the oven is 40 or more degrees cooler than the set temperature. There are no stones, mats, or other objects in the oven to prevent circulation.

Has anyone out there had success correcting issues like this or is this just the state of things today? Buy a new $3000+ appliance and have it perform like crap?
