Teaching Multimedia Elective: Looking for tips, resources, online classes to help develop class

I am a newish teacher that was kind of thrusted into a middle school elective to “teach” multimedia. We had very little at the beginning and through minor research with a lot of support we were able to purchase some jice equipment. Recently, we were able to purchase a Sony A7iii, with basic lenses (28-75 & 50-210mm) We have a DJI Ronin RS3 Gimbal;

If anyone could point out some info/links that best help teach students the basics to videography and ideas to help develop class, Im all ears. I do mean basic, they are middle school students that can only do so much. I am aware that the gear may be a little advanced but the gear was already provided by generous donations. As a teacher, we work with what we have, even if the gear is better than what we need. Any help would be appreciated.
