Thoughts on this Gaming (+light streaming/editing) build? £2.3k budget

Main use case is 1440p gaming, recording footage/streaming and light photo/video editing.

Undecided between the 2x monitors on list, just to clarify it'll be one or the other!

Open to any suggestions/feedback - looking to purchase in the next few weeks or during Black Friday if I can be patient enough.
