"unstable" really

In what world does unstable mean you can destroy the item ? I just spent 2 divs on an undying jewel only for it to disappear because I desicrated it 3 times. That's currency I just can't get back, not knowing in the first place that this could happen. I have had zero issues with any of the other "gambling" mechanics in poe2 as it clearly says that this can ruin or destroy the item/items, so why does this get zero explanation other than unstable. It's not really good enough.
