What Maps Do You Use for Adhoc Battles?

I'm going to be running an adventure set in a town online with a VTT. The main buildings already have battle maps but other buildings where combat could occur don't. What do you use for adhoc battles? Do you draw them or use theatre of the mind or do you have a set of basic maps that you use?
