RV recommendations for solo living

Hello, me again - 27M - Texas - potential solo (with one cat) full-time stationary RVer

I have been doing some heavy research for about 3 weeks now on different RV models, trying to dwindle down what would work best for me.

Just looking for recommendations for travel trailer recs that fit the below specs.
I have looked at so many floorplans and brands, used and new, and want to see if anyone off hand knows something that would be a good starter.

Preferred specs:
- around 16-20 ft in length (height doesn't matter as i'm very short)
- towable by Tacoma TRD off road (can probably change if needed, just preferred)
- fridge w/ larger freezer, and the typical, stove, micro
- dry bath
- used would be preferred and under $15k
- a good amount of storage space

floorplan i'm leaning toward is like this

something like the catalina summit s7 164bhx or Forest River Rv Cherokee Wolf Pup 14CC. would love to hear from solo RVers and different models you've tried, what's worked for you, what didn't, if you think budgeting something a little higher to get something better, etc.
i've seen a few used travel trailers on RV trader that seem promising, just not sure if they're good enough to spend money on inspections/traveling the distance to look at them in person. happy to provide those links if anyone would like to weigh in
