ELI5: Why leave $1 dollar to someone in your will?

I've heard of cases where someone has been advised to leave a token amount of money to someone in their will when they actually want to cut them out entirely. I appreciate the reason for this is to make it more difficult to challenge that they were forgotten from the will. Wouldn't it be clearer and have the same effect to just say "I leave nothing to X"?
