Issues grinding fine for espresso [Baratza Encore ESP]

I am struggling with my ESP grinder that is less than 8 months old and is unable to grind certain beans fine enough for espresso.

I switch beans every month and it does well for some of the beans at around the 10 setting so much that it could choke the coffee machine . But for others even at a 1 setting the grind is still coarse and produces a watery shot.

I have tried everything such as

• Cleaning the grinder thoroughly by doing a full disassembly as shown on Baratza videos

• Shimmed the grinder by adding the 2 additional shims

I also contacted Baratza support who were not very helpful to be honest. They were happy to swap with a new one as the grinder is within warranty.

However I feel I’ll end up encountering the same issues with the new grinder as well. I saw older threads here with similar issues.

Has anyone found a solution ? Or has anyone isolated the problem to certain types of beans that are a problem with the grinder ?
