How to stop accidentally spending my rent and bills money

Budgeting is so fucking confusing for me I keep spending money I don’t have and now I have a bunch of overdue health insurance premiums due to issues with autopay. The issues were technological in nature, not due to my not having enough funds but that’s not important.

My bills are all on different schedules and I can’t change it and I was at one point managing it by keeping multiple bank accounts that I had refilling on an automatic schedule but then if there was even one little hiccup in that I’d end up getting overdraft fees and late notices…etc. But that system worked the best out of all of them.

This is so complicated I’m having so much trouble understanding how much money I actually have at any given time.
