Wine tour with the grapes

Hey. Me and a few friends aes heading up next weekend and wanted to do a wine tour. We’re more interested in being taught the actual process of making the ice (seeing the grape vines, how they process them, etc.) Seems like most tastings are just that, tastings. Any recommendations on a good winery to go to where we can get the real “how it’s made” experience. Thanks!
