600 Hour Later and a new PC, how do I enjoy Skyrim again?

So Im sure you guys answered this question at least a thousand times already, but I haven't seen a post like this in the past like 3 months so I thought I'd ask.

A little bit of lore; I have 600 hours on Skyrim, vanilla or with very light mods.
I've done the main quest multiple times, the 3 guilds + Dark Brotherhood (both sides)
Basically all that I would consider the major questlines.
I've done a Shield and Sword run, a Destruction run and a Fist Only with Ordinator.
I tried at least twice to play Stealth Archer but I just cannot get into it, perhaps some tips for this too would be appreciated, cause I know there are a lot of y'all in here.

Thing is, I just downloaded Nolvus v6, because I bought a new PC, and I would really like to enjoy this modpack fully.

In short, do you have any recommendations? Playstyles? Restrictions you enjoyed? Something not too hard, I'm a very casual player >.<
