I made pot pies and I've done this 1,000x but today they came out weird ...? The dough isn't cooking evenly bc it sat in the fridge, wdid?

I'm upset I can't post a photo. Anyway I always use cream of chicken, 1/3 cup milk, some frozen veggies, chicken and I put some dough on the top and button and put it all inside little oven safe bowls (so cute) Anyway I made multiple for dinner but everyone already had dinner so I wrapped them in plastic wrap and now today I cooked them exactly as normal and the dough didn't rise right.

I used Pillsbury Original Crescent Rolls - 8oz/8ct (4 pies- 1 dough on the bottom and 1 dough on top of the chicken pot pie)

I assume it's because they sat in the fridge all night. What do I do? The dough won't cook right. The edges get all hot and almost burnt, and the enter of the dough (the middle) is still very, very doughy. It won't cook even.

I was trying lower temps but the dough seems too moist. I'm assuming from the plastic wrap holding the moisture in, just sat on top of the dough...

What do I do? :( I wish I could attach a photo so you can see what I mean The dough won't rise correctly it's deflated lol
