How to do a nikkah in the UAE

Long story short I’ve met the most amazing woman and we get on like a house on fire. We’re both Muslim and we have involved the families, however our families live in our home countries.

Her dad is visiting next month and we want to use it as an opportunity to do a nikkah so that we can keep everything halal.

Both families have agreed that we would get it registered in the judicial courts next year, but we want to get married Islamically when her dad visits.

How would we go about doing this?

Has anyone been in a similar situation and can point us in the right direction?
