Untapped potential in Games

Is it just me or are biker games an untapped potential. Sure you have games like “Ride to Hell” or GTA’s “Lost and damned”, but they are so surface level. The opportunity to have a story deep game where you can make choices while meeting with your crew at a table or an underdog story where you start as a prospect and move your way up. Customizing your bike or an entire me crew. I feel like this would translate perfectly in a video game. What would you like to see in a biker game or what other untapped cultures/subcultures are there that you would like to see?
