How I Accidentally Made My Favorite Keto Breakfast and It Was Way Better Than I Expected

Breakfast

This morning was one of those chaotic mornings where I didn’t even have time to think about breakfast. I opened my fridge, staring at a sad little pile of ingredients eggs, some leftover mozzarella, a handful of pepperoni, and a tiny bit of almond flour. Honestly, I wasn’t expecting much. I just needed something quick, keto friendly, and filling.

I started whisking three eggs with a splash of heavy cream and decided to mix in about a quarter cup of almond flour. Then I tossed in the mozzarella and chopped up the pepperoni. I sprinkled some Italian herbs, a pinch of garlic powder, and a little salt. Not knowing what I was doing, I poured the mixture into a greased muffin tin and popped it in the oven at 350°F.

I was convinced they’d come out flat or weird, but when I checked after 20 minutes, I couldn’t believe my eyes they were golden, puffed up slightly, and smelled incredible. I took a bite, and it hit me: soft, cheesy, savory little muffins that actually tasted like mini pizzas. Somehow, my accidental creation turned out better than anything I could have planned.

Now I’ve officially found my go-to lazy breakfast. I’ve started experimenting with different toppings too sometimes cooked bacon and spinach, other times sausage and sun-dried tomatoes.
