Are there any hidden gotchas when a website allows you to accept "essential cookies only"?

In recent times I've noticed many more sites letting you choose necessary/essential cookies only. Just to make sure, I check the settings and usually I do see only necessary cookies selected.

But somehow I feel suspicious. Is there anything to watch out for when selecting "necessary cookies only"?
