Planning trip for family!

Hello! I have never been to an all-inclusive Mexican resort so I need help with where to go! We are very open to location but I will be with my mid-60s parents so we probably don’t need a party resort. I would like a place that beach access is very easy and not too far of a walk. I would love a place with good food options, more authentic vs touristy. We will stay around 7 nights, 5 of us in total so we will probably need 2 rooms. I’d like with flights included to spend somewhere around $1200 per person. I’m thinking somewhere mid May is good for us to go just to stay out of hurricane season and that’s when I hear it’s a little cheaper. Any advice would be great and appreciated! Thanks in advance!
