1x32GB vs 2x8GB ram

I have a lenovo prebuilt (This one) that I got a good deal on fairly recently and replaced the ram with a single stick of 32GB 2133mhz. however I also have the option to swap out the ram I just put in for 2 sticks of 8GB 3200mhz that would be dual channel (I think)

i mostly play geometry dash and record that with OBS replay buffer and minecraft, and fortnite on occasion, sometimes with youtube or spotify in the background
