Is it possible to run two 34" Ultrawides on either side of a regular 27" 1440p monitor

I have an OLED 27" 1440p display that I have casually been simracing on, but now I would to upgrade to a triple screen setup. To get the biggest field of view possible I wonder if it would be possible to use two 34" ultrawides to use as side monitors alongside my current OLED or if its only possible to use 2560x1440 monitors.

Sidenote: the two monitors I will be purchasing will not be OLED, but either IPS or VA. Do you think you will be annoyed at the difference in quality between OLED and IPS/VA or would it be fine while driving. And which type of display will be the least different in quality to an OLED?
