Number of Entrees Question

I feel this question is so stupid I can’t ask an actual caterer and I can’t seem to word it right for google to help me. If I’m planning a wedding with plated meals and there are options for one entree or two, am I deciding whether my guests will have options or if they will get both? For instance, say there’s chicken and pasta for a vegetarian option. If I choose a package for one entree will guests be limited to just chicken or will they be able to choose between the two and receive one. On the flip side of that, is paying the extra $10 or whatever a person so that everyone gets two entrees or is the up charge for the privilege of choice.

This distinction is important in choosing a place because I am, and some of my guests, are vegetarian while my fiance is not. I certainly am not eating chicken anymore than I expect him or the majority of my guests to have a vegetarian meal (in the above example)
