How does your shop prioritize work?

I kind of assume if you squint real hard it's close-ish to first come first serve, but aside from customer personality, what determines priority? Like if it's some guy's work truck and he's losing money, do you usually try to help him get on the road faster than another guy's weekend warrior? Just curious as to how your shop decides, as to us customers it's a black box. Thanks in advance!
