Theft decks players, how do you win?

Hi everyone, I saw the new [[Garland, Royal Kidnapper]] and I wanted to build a thet deck around him. However, besides a few options like using [[Nanogene Conversion]] or [[Breach the Multiverse]], I realized I had no idea how this kind of decks might have a consistant way of winning besides stealing the biggest creatures or playing the usual dimir combos. So the question is, what kind of theft decks you run and how do you win with them?
