Best RAID setting for fastest speed

The ENVR and UNVR Pro both give the option of RAID 5 or 10. It says one is “best performance” but that’s very arbitrary. I’d like fastest speed in for searching/scrubbing. Which would achieve this and why? Thanks in advance.
