Frigidaire ice maker evaporator keeps icing up and stops making ice

I have a Frigidaire refrigerator fghf2366pfba. The evaporator in the ice maker keeps icing over. When it does the ice maker stops making ice because it can’t get cold enough. I have to keep defrosting it. Usually I have to run the defrost cycle 3 times for it to defrost enough to actually start making ice. It will work for a week or two then stop making ice again. It’s to the point where we are considering a new fridge. It’s really driving me crazy. The fridge works fine otherwise so I would love fix the ice maker. Anyone have any tips for diagnosing this?
