Can beans change almost overnight?

I’m at the end of a bag of this coffee:

Roasted September 22, and in mid-October until a day or two ago, I was getting all the strawberry, marshmallow, milky notes that it describes. Big fruit bomb, crazy nose.

I’ve been brewing it either with 4:6, or Tales single pour, both with great results, until maybe yesterday.

Now both methods yield a hollow, acidic, vegetal brew. Today more so than yesterday.

I haven’t changed my technique or procedure at all - can beans change that fast?
