Dumb question maybe, but is “being anonymous online” even real anymore?

I’ve been trying to be more private online lately, but the more I look into it, the more it feels impossible. I use a VPN, privacy browser, fake emails for signups, and I’ve turned off all the “track my data” stuff I can find. But somehow, ads still follow me around like they know who I am.
I was watching a video about data brokers and it said most of our personal info gets bought and sold by companies we’ve never even heard of. Things like old addresses, phone numbers, search history, even the apps we download. I checked one of those data exposure sites just to see, and it had hundreds of records with my name tied to random stuff I forgot I even signed up for.

So I’m wondering if being “anonymous” online is actually possible at all. Or is it one of those things that sounds good in theory but doesn’t really exist anymore because of how everything’s connected?
Does anyone here actually manage to stay off the radar in a realistic way? Or are we all just playing hide and seek with the internet at this point?
